Pan Fried Salmon - Cooking Instructions
Preheat non-stick frying pan over medium-high heat. Brush salmon fillets on both sides with extra virgin olive oil. Season on both sides with sea salt, freshly ground black pepper, allspice, and chopped thyme.
Transfer fried salmon fillets or steaks to plates, spoon over the blueberry sauce and sprinkle with remaining mint leaves. Serve fried salmon with blueberry sauce immediately.
Heat 1 tablespoon extra virgin olive oil in a large non-stick pan over medium heat. Add sliced shallots and fry for about 5 minutes, or until softened. Add sliced garlic and season with pinch of sea salt, about 1/4 teaspoon chopped thyme, and about 1/8 teaspoon allspice. Mash berries with potato masher or back of fork and cook until blueberry sauce thickens, about 5 minutes, stirring constantly.
