st entities first though: the Spanish do not phone their wine ‘sherry’. This is an anglicised edition of the word ‘Jerez’ (which is affirmed ‘hereth’ with the accent on the second 'e'). To be considered a honest ‘sherry’ a wine must come from the ‘sherry triangle’. This is a region on the Atlantic seashore of Anadalucia framed along the towns of Jerez de la Frontera, El Puerto de Santa Maria and Sanlúcar de Barrameda. So, not stuff what it says on the bottle, everything else is just fortified wine in the style of Jerez.
There are 3 cardinal types of widely-available sherry: dry, medium and sweet, plus a pair that are a morsel another and harder to detect. We’ll cover the cardinal ones premier.
The types of sherry.
First we have the dry sherries Fino and Manzanilla. These are pale in colour, bitingly dry and delicately flavoured. The Manzanilla has a salty, nuttier taste.
